So how much roasting temperature is appropriate?
What is the proper temperature for roasting?
Unlike other grains, coffee beans are roasted in about 12 - 16 minutes. Although it is not too long, the temperature for roasting will constantly change through the changing color of the beans. Therefore, it can be said that roasting pure coffee is an art. If inexperienced, it only takes a few seconds for the roasted coffee beans to reach the perfect taste or become defective products. Depending on the stage, the coffee beans will be roasted at a different temperature. So the appropriate roasting temperature is how much?

► The temperature to start roasting coffee beans is 100 degrees Celsius: At this stage, the beans will gradually heat up and shrink as a result of evaporation.

► Increase the temperature to 150 degrees Celsius when the beans start to yellow: At this stage the coffee beans will continue to evaporate and shrink, and will begin to smell.

► Roasting coffee at a temperature of 180 degrees C when the beans begin to turn dark yellow: When the beans turn to dark yellow the steaming process has completely ended so the beans do not shrink anymore but start to expand. On the surface of the grain begins to appear veins and a stronger aroma.

► Roast coffee at 200 degrees C when the beans turn light brown: Coffee beans will expand quickly, the fragrance will be more sweet. Starting at this stage, you can use the seeds to grind them into flour. However, because the chemical reactions have not yet taken place, the flavor has not yet reached the most delicate.

► Roasting coffee at a temperature of 210 degrees Celsius when the beans turn brown: At this stage, the beans will begin to crack and smoke, creating a passionate aroma.

► When the coffee bean stops exploding, you will adjust the temperature to 215 degrees Celsius. The coffee beans will have a big change in volume by 150% and the weight will be reduced by 10-17%.

► Increasing the temperature to 225 degrees Celsius will start the second explosion. At this time the oil in the seed will secrete the covering of the beans to create a shiny, attractive surface.

► When the temperature goes up to 235 degrees C, the coffee bean will start to explode a second time.

► Finally roasting coffee at a temperature of 240 degrees C. When the beans reach a dark brown color, the roasting process will end. At this time the volume of coffee beans will increase to the maximum and weight will decrease to 20%.
